Horray!!, This was driving me crazy, I couldn't figure out why it would not hold the label. If I re-labeled after the boot, the mounts worked fine. Until I rebooted again. I removed the "sf" paramater and it booted fine. Read the label, mounted the partitions and the new swap space. This explains the "swap not configured" message I got too. I can't help but think that this might not be the best fix, but I am not sure I understand the issues here.
