Well, I don't know if this is exactly what you want, but there is the book:

	"The Design and Implementation of the 4.3BSD UNIX Operating System"
	by Leffler, McKusick, Karels, and Quarterman
	1989 Addison Wesley, publisher. ISBN 0-201-06196-1

This is not specific to the Intel implementations, but as a theory of operation it is a very good book.
