What is the best way to include support for Objective C on NetBSD 1.2's GCC
   2.7.2?

Get NetBSD-1.2.

Why does the language not come with NetBSD?

It didn't use to come with older versions of the OS, because it is (or
was?) not needed to rebuild the system itself. (g++ is needed to build
groff, which is needed for document/manual page formatting).
