Because you can see what you're doing, because you can let someone else
do it for you, because your file will be usable by 80% of the computers
in the world, because you can get print drivers for hundreds of printers,
because you can use thousands of cheap fonts?  How many reasons do you
need?

And you don't have to defer, it just means you don't have to undo things.
But, as long as you do most of it with styles it is easy to change
anyway.

I prefer that myself, but only programmers think in terms where
you can solve any problem by adding one more layer of indirection.
If you have to teach other people very often you come to appreciate
the style gallery where you pick a document type and then just
select from a list of pre-built styles with obvious names, including
bullet, numbered and plain lists at several levels.  Besides,
search/replace works with styles and other formatting codes. The
hard part there is knowing what the search target is after you
did something wrong.
