Did you try the FreeBSD FAQ?  I dedicated a paragraph describing my
own sendmail setup with UUCP.

That also requires header rewriting.  Not sure, never did this lately
(although i used to use it a lot with pre-.mc configurations), but i
think MASQUERADE_AS is intended for this.  Maybe you gotta roll your
own however.
