Reasons for getting two smaller-capacity drives instead of one
larger-capacity drive:

1) SCSI bus throughput may be improved. Remember that you're limited by
the average transfer rate of each drive, the the throughput of the bus for
your disk traffic. Putting everything on one drive limits you to
<10MB/sec in most cases.

2) (some level of) fault tolerance. If you have one disk and it fails,
you're down until you can get a replacement drive, install it, and restore
from your most recent backup (you DID make backups, right? :) )

my 2 cents
